Thai beef curry
Instructions:
- Cut the beef into slices about 1⁄4-inch thick, to give 3 slices per person.
- Season with salt and pepper.
- Finely slice and then chop the ginger, without peeling it.
- Place the bottom of the pressure cooker over medium heat. Add the oil, followed by the ginger. Fry gently for 2 minutes, until fragrant.
- Add the curry paste and stir through.
- Add half of the cilantro.
- Add the water.
- Next, add three quarters of the coconut milk.
- Add the beef.
- Put the lid on the pressure cooker, then cook over medium heat for 50 minutes. Remove the lid, then simmer until the sauce is thickened and tasty.
- Add the rest of the coconut milk.
- Add the remaining cilantro leaves, then season to taste with salt if needed.
- Serve the curry.
