Three Fruit Cobbler
Instructions:
- 8 cups mixed fruit, peaches, plums, apricots, chopped
- 1/2 cup sugar
- 1 1/2 tsp. all purpose flour
- zest of 1 orange
- 1 tsp. cinnamon
- Topping:
- 1 1/2 cups all purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup sugar
- 6 tbsp. cold butter
- 2 eggs
- 1 cup buttermilk
- 1 tsp. vanilla extract
- 2 drops almond extract
- 1/4 cup blanched almonds, sliced
- Preheat oven to 400F, and lightly grease 12 inch square glass baking dish
- Cut fruit into chunks, mix with sugar, flour, cinnamon and zest.
- Spoon into baking dish.
- Sift dry ingredients together.
- Cut in butter with pastry cutter, two knives or your fingertips until coarse lumps are formed.
- Blend in eggs, buttermilk, vanilla and almond extracts.
- Spoon over fruit and spread evenly. Sprinkle with almonds.
- Bake for 30 minutes or until golden brown and firm to the touch.
- Cool on wire rack.
- Serve warm or chilled.
