Tomato biscuits with basil butter
Instructions:
- 4 hot freshly baked biscuits;
- Basil Butter
; - 1 large or 2 medium sun-ripened tomatoes;
- Coarse salt and ground black pepper.
- Split the hot biscuits and slather the insides with some of the Basil Butter. Core the tomato, peel it if necessary, and cut into very thin slices. Tuck the slices inside the biscuits and sprinkle them generously with salt and pepper. Close the biscuits and press lightly so that the melting butter mingles with the tomato juice. Eat them while they’re hot.
