Traditional Potato salad
Instructions:
- Bring a large pan of water to a boil, season with salt and add the potatoes. Cook for 20 minutes until tender.
- Drain the potatoes and wrap individually in aluminium foil.
- Meanwhile, finely chop the chives.
- Trim the stems off the scallions.
- Finely chop the bulb.
- Cut the gherkins into 1⁄2-inch slices.
- Slice the frankfurters.
- Using a balloon whisk, mix together the mayonnaise, cream, and mustard. Season with salt and pepper.
- Unwrap the potatoes and peel.
- Cut the potatoes into 1-inch cubes and put into a large bowl.
- Add the onion, gherkins, capers, and sausages to the potatoes.
- Spoon the sauce on top, then mix together, being careful not to break up the potatoes.
- Season the salad with salt and pepper.
- Sprinkle with the chopped chives and serve.
