True-Blue Potato Salad

- 1¼ cups sour cream
- 2 tablespoons minced fresh parsley
- 2 tablespoons tarragon white wine vinegar
- ½ teaspoon celery seed
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ¾ cup (about 5 ounces) crumbled blue cheese
- 4 cups (1½ pounds) cooked red, white, and All Blue potatoes, cubed
- ½ cup diced celery
- ½ cup sliced green onions
- ½ cup sliced water chestnuts
Instructions:
Blue cheese lovers will probably love this salad.
- Combine the sour cream, parsley, vinegar, and seasonings; mix well. Stir in the blue cheese.
- Combine the potatoes, celery, green onions, and water chestnuts in a bowl. Add the sour cream mixture and toss lightly.
