Tuna a la King
Instructions:
This is a very simple and quick-cooking sauce that can be served over noodles,
baked potatoes, or rice for lunch or light supper.
2 TBS butter
2 TBS flour
1⁄2 tsp dried thyme or marjoram
1 can (13 ounces) evaporated milk
2 cans (61⁄2 ounces each) solid
tuna, drained and flaked
1 cup frozen peas or mixed
vegetables, thawed and drained
salt and pepper
juice from 1⁄2 lemon
2 TBS chopped parsley
- In a saucepan, melt butter over medium heat.
- Whisk in flour and thyme or marjoram, stirring for 2 minutes.
- Whisk in gradually the evaporated milk, stirring until slightly thickened Add tuna, peas, and salt and pepper to taste.
- Cook for 5–7 minutes or until piping hot. Stir in lemon juice.
- Garnish with parsley.
