Tuna Tartare on Cucumber Slices
Instructions:
- 2 tablespoons sesame or olive oil
- 1 tablespoon soy sauce
- 1 tablespoon minced scallions
- 1 teaspoon minced shallots
- 1 lb sushi-quality tuna, minced
- Tabasco sauce to taste
- Salt and pepper
- 3 English cucumbers, cut 3/4\" thick
- In a medium bowl combine all ingredients except for cucumbers.
- Cover tuna mixture with plastic wrap; refrigerate for 2 hours.
- Using a melonballer, scoop out a hollow in the center of each cucumber slice.
- Spoon marinated tuna onto the slices.
- Makes about 62 pieces
