Turkey avocado carrot wrap
Instructions:
- 1 soft flour tortilla (preferably whole wheat, but plain will do)
- 1â„2 avocado, halved and pitted
- A squeeze of lemon juice
- 1 slice Monterey Pepper Jack cheese
- 2oz (60g) sliced, cooked turkey breast
- A small handful of baby spinach leaves
- 1 small carrot, shredded
- A little hot sauce , optional
- Lay a sheet of wax paper on a board and place the tortilla on top. Scoop out the avocado flesh and crush with the lemon juice, then spread across the tortilla. Top with the cheese, then the turkey, then the spinach, and last the carrot. Approach wrapping the tortilla as if it were a clock: Begin to wrap from six o’clock, continuing to wrap until the tortilla has come full circle and now resembles a cone shape.
- Peel back, reach for your favorite hot sauce—if you feel like it—and enjoy.
- If you are preparing ahead, make these in the morning—don’t try to put them together the night before or the spinach will wilt and the carrot will make the tortilla damp! You can add a handful of bean sprouts to the wrap, to feel really good about your lunch, but you’ll have to roll it quite tightly to hold all that filling!
