Turkey Hash
Instructions:
- 3 cups cooked turkey, chopped coarsely
- 3 cup potatoes, cooked and chopped coarsely
- 1/2 cup onion, chopped
- 1/2 cup red and green sweet peppers
- 1/2 cup mushrooms
- 1/4 cup fresh parsley, chopped fine
- 1/2 cup heavy cream
- 2 eggs, beaten lightly
- 3 cloves garlic, minced
- 1 tsp. Worcestershire sauce
- 1 tsp. paprika
- 1/2 tsp. salt
- fresh ground pepper to taste
- 2 tbsp. olive oil
- Combine turkey, potato, pepper, mushrooms, onions and parsley in mixing bowl.
- Combine cream, egg, garlic, Worcestershire sauce, paprika, salt and pepper in another bowl, mixing well.
- Stir cream mixture into turkey, coating well, and let stand 5 minutes.
- Heat oil in skillet over medium heat.
- Add turkey mixture, cover and cook for 5 minutes or until bottom is set.
- Transfer to broiler and cook another 5 minutes or until top is set and golden brown.
- Serve with a side salad and hot cider.
