Turkey Meat Loaf
Instructions:
Thickly slice any leftover meat loaf and place between slices of hearty bread that have been spread with mango chutney for the best ever brown-bag lunch. 1 tablespoon olive oil 1 medium onion, finely chopped 2 garlic cloves, finely chopped 2 pounds ground turkey meat 2 large eggs 1 cup fresh bread crumbs (about 2 slices firm white bread) 1â„4 cup milk 1â„4 cup mango chutney, chopped 2 tablespoons ketchup 11â„4 teaspoons salt 1â„2 teaspoon dried sage
Makes 8 main-dish servings. Prep: 15 minutes Bake: 1 hour
- Preheat oven to 350°F. In 6-inch skillet, heat oil over medium heat. Add onion and garlic and cook, stirring frequently, until tender, about 5 minutes. Transfer to medium bowl; cool to room temperature.
- Add ground turkey, eggs, bread crumbs, milk, chutney, ketchup, salt, and sage to bowl; combine just until well blended but not overmixed. Spoon mixture into 9" by 5" metal loaf pan; press down gently.
- Cover with foil and bake until meat thermometer inserted in center of meat loaf registers 170°F, about 1 hour. Cool in pan 10 minutes; turn out onto warm platter and slice.
