Vanilla filling
Instructions:
- 1 tablespoon butter;
- 1⁄3 cup sugar;
- A dash of salt;
- 1⁄4 cup all-purpose flour;
- 1 cup milk;
- 1 cup heavy cream;
- 2 eggs;
- 1 teaspoon vanilla.
- In a saucepan, blend butter, sugar, salt, and flour. Scald the milk and beat gradually into the flour mixture.
- Cook over low heat, stirring vigorously, until mixture is very thick. In a bowl, beat the heavy cream with the eggs.
- Stir hot cooked mixture into the egg mixture; return mixture to pan and cook again until thick, but do not boil.
- Add the vanilla. Cool. This makes a very thick paste for filling cream puffs or eclairs.
