Vegetable and Grain Casserole
Instructions:
- 3 tablespoons cold pressed olive oil
- 2 onions or 6 cloves garlic, chopped
- 1 red pepper, chopped
- 1/2 pound mushrooms, sliced
- 1 cup brown rice
- 1/2 cup wild rice
- 8 cups water
- 1 cup lentils
- 1/4 cup millet
- 1/4 cup amaranth
- 15 oz. can diced tomatoes
- 2 carrots, sliced
- Other vegetables, chopped (spinach, bok choy, kale, etc.)
- 1 teaspoon basil
- 1/2 teaspoon black pepper
- Dash of cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon sea salt
- In a 8-quart pot, sauté onions, peppers, and mushrooms.
- Add rice and sauté for another minute.
- Add remaining ingredients. Bring to a boil.
- Cover and simmer for 45 minutes.
- Serves 6 to 8 people
