Vegetable Lentil Soup
Instructions:
- 5 cups tomato juice (one large can)
- 4 cups water
- 1 cup lentils, washed
- 1 cup diced carrots
- 1 cup chopped celery (or spinach)
- 1/2 cup chopped onion
- 1 tsp sea salt (or 1 Tbsp Chicken Flavour)
- 1/2 med green pepper - optional
- 2 med bay leaves
- Bring tomato juice and water to a boil.
- Add the rest of the ingredients.
- Bring back to a boil; reduce heat and simmer 1 1/2 hours.
- Freezes well.
