Vegetable Medley Italiano

- 3 cups broccoli florets
- 2 medium zucchini, cut into ¼inch slices
- 1 medium red pepper, cut into strips
- 1 medium onion, cut into strips
- 1 garlic clove, crushed
- 1½ teaspoons chopped fresh basil or ½ teaspoon dried basil
- 3 tablespoons butter, divided
- 20 Ritz crackers, crushed (about 1 cup)
- 1 cup (4 ounces) shredded mozzarella or other favorite cheese
Instructions:
Round out a variety of menus with this side dish that lends a delicious pop of color.
- Preheat the oven to 350°F.
- In a large skillet, over medium heat, cook the broccoli, zucchini, pepper, onion, garlic, and basil in 1 tablespoon of the butter until crisp-tender, stirring occasionally. Spoon the mixture into a 2-quart casserole dish.
- Melt the remaining butter. In a medium bowl, combine the crackers, cheese, and melted butter. Sprinkle evenly over the vegetable mixture. Bake, uncovered, for 20 to 25 minutes or until the vegetables are hot and the cheese melts.
