VINAIGRETTE DRESSING
Instructions:
- 1 heaped tbsp Dijon mustard
- about 4 tbsp white wine vinegar
- 1 cup extra-virgin olive oil
- sea salt and freshly milled
- black pepper
- Whisk the mustard with a large pinch each of salt and pepper. Whisk in 2 tbsp vinegar, then gradually whisk in the oil.
- Taste and add more vinegar and seasoning if you like.
- Keep in a tightly covered jar in the refrigerator.
- Before use, shake well to emulsify the dressing again, then taste and correct the seasoning if necessary.
- MAKES ABOUT 11/4 CUPS
