Waldorf Pasta Casserole
Instructions:
- 1 1/2 cups elbow macaroni, cooked
- 1 lb. spinach, steamed and chopped
- 2 cups bean sprouts
- 1 lb. Feta cheese
- 2 onions, chopped and sauteed
- 1/2 cup walnuts, chopped
- 2 eggs
- 1/3 cup milk
- fresh ground pepper to taste
- Preheat oven to 350F and lightly grease casserole.
- Combine macaroni, spinach, sprouts, cheese, walnuts, and onion in lightly greased ovenproof dish.
- Beat egg and milk together and pour over casserole.
- Sprinkle with pepper.
- Bake for 20 minutes or until bubbly.
