WARM MILD TOMATO SAUCE

Not everyone can handle the super-hot, spicy salsas available in the market today. Well, not to worry. This one's nice and mild.
- 4 tomatoes, quartered
- ¼ cup vegetable oil
- 1 onion, thinly sliced
- ½ green bell pepper, thinly sliced
- ¼ teaspoon garlic powder
- â…› teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions:
- Put the tomatoes in a blender and blend until pureed. Set aside.
-  Heat the oil in a medium skillet over medium heat. Add the onion and bell pepper and cook until soft, 3 to 5 minutes. Add the pureed tomatoes, garlic powder, cumin, salt, and pepper and bring to a simmer. Reduce the heat and simmer gently for about 45 minutes. Serve warm.
- NOTE: If the tomatoes aren't very red, you can add a little canned tomato sauce to the pan.
