Warm Tomato and Chicken Salad
Instructions:
- 2 chicken breasts, boiled and shredded
- 1 large red onion
- 1 punnet cherry tomatoes
- 3 cups lettuce leaves
- Olive oil
- Balsamic vinegar
- Place some olive oil in a frying pan along with onion and cook for 4-5 minutes or until lightly browned. Remove from heat and place onion in a large salad bowl along with shredded chicken and lettuce.
- Add 1tbs olive oil to frying pan and place back on medium heat. Add tomatoes to pan and cook until the skin starts to wilt. Add to salad bowl and combine well with chicken, onion and lettuce.
- Add olive oil and balsamic vinegar to taste before serving.
