WELSH RAREBIT
Instructions:
- 2 Tb. butter
- 1 Tb. flour
- 1 c. milk
- 1/4 tsp. salt
- 1/8 tsp. paprika
- 1/2 lb. cheese cut into small pieces
- 6 slices of toast or 6 wafers
- Melt the butter, add to it the flour, and stir until smooth.
- Gradually add the milk, and cook for a few minutes; then add the salt, paprika, and cheese, stirring until the cheese is melted.
- The finished rarebit should not be stringy.
- Pour over the toast or wafers and serve.
- Sufficient to Serve Six
