Wheat Berries with Brown Butter and Pecans
Instructions:
Wheat berries have an appealing chewy texture. Combining them with pecans and brown butter brings out the grain’s nutty flavor. 1 cup wheat berries (whole-grain wheat) 2 tablespoons butter or margarine 1 medium onion, chopped 1â„2 cup pecans, coarsely chopped 1â„2 teaspoon salt 1â„8 teaspoon ground black pepper 1 tablespoon water 2 tablespoons chopped fresh parsley
Makes 31â„2 cups or 6 accompaniment servings. Prep: 10 minutes plus overnight to soak Cook: 1 hour 20 minutes
- In bowl, place wheat berries with enough water to cover by 2 inches. Soak overnight. Drain.
- In 3-quart saucepan, combine wheat berries and 3 cups water; heat to boiling over high heat. Reduce heat; cover and simmer until wheat berries are tender but still firm to the bite, about 1 hour. Drain.
- In same clean saucepan, melt butter over medium heat. Add onion and cook, stirring frequently, until tender, about 5 minutes. Stir in pecans, salt, and pepper. Cook, stirring, until pecans are lightly toasted and butter begins to brown, about 3 minutes. Stir in wheat berries and water; heat through. Stir in parsley.
