White house molasses pie
Instructions:
-
Abraham Lincoln had such a craving for molasses that while he was President he had a standing order for molasses pie at William Taussig's New York Excelsior Steam Cracker Bakery in Washington. The original recipe in the White House Cookbook reads like this: "Two teacupfuls of molasses; one of sugar, three eggs, one tablespoonful of melted butter, one lemon, nutmeg; beat and bake in pastry."
- 1⁄2 cup light or dark molasses;
- 1⁄2 cup dark corn syrup;
- 1⁄2 cup tightly packed light or dark brown sugar;
- 3 eggs;
- 2 tablespoons butter, melted;
- Juice and rind of 1 lemon;
- 1⁄2 teaspoon nutmeg;
- 1 unbaked 9-inch pie shell.
- Preheat oven to 400 F.
- Combine the molasses, corn syrup, sugar, eggs, butter, lemon juice and rind, and nutmeg. Pour filling into the pie shell. Bake 25 to 30 minutes, or until pie is set.
