Whole seed mix
Instructions:
- ’Panch’ means five in Hindi and panch phora is a combination of five different aromatic seeds. These are used whole, and when fried in oil at the start of a dish, impart an exquisite flavour.
- 2 tablespoons brown mustard seeds;
- 2 tablespoons cumin seeds;
- 2 tablespoons nigella seeds (kalonji);
- 1 tablespoon fennel seeds;
- 2 teaspoons fenugreek seeds.
- Put all the seeds into a glass jar with a well-fitting lid. Shake before use to ensure even distribution, as the heavier seeds tend to sink to the bottom.
