Whole wheat pancakes
Instructions:
- In bowl, whisk together all-purpose and whole wheat flours, sugar, wheat germ, skim milk powder, baking powder, salt and nutmeg. In separate bowl, whisk together eggs, milk and 2 tbsp of the oil; pour over flour mixture and stir just until combined.
- Heat large nonstick skillet or griddle over medium heat; brush with some of the remaining oil. Using 1⁄4 cup batter per pancake, pour in batter, cook until bubbles break on top but do not fill in, 2 to 3 minutes. Turn and cook until bottom is golden, about 1 minute.
