Wild Rice Crackers
Instructions:
- In a large bowl, add the yeast to the warm water. Let the bowl sit until the yeast bubbles, about 5 minutes.
- Add the dill and garlic powder (these can be omitted for a plain cracker). In another bowl, stir together the flours, cornmeal, wild rice, and salt.
- Add the flour mixture to the yeast mix. Mix well until the dough is pliable but not sticky.
- Place the dough in an oiled bowl, cover it, and let the dough rise for about 1 hour. Punch down the dough and let it rest for another 15 to 20 minutes.
- Preheat the oven to 400 degrees and grease a baking sheet. Divide the dough into 8 pieces. Working on a floured surface, use a rolling pin to roll out each piece into a very thin round not thicker than 1/8 inch and about 8 or 9 inches in diameter.
- Place the rounds on an oiled pan, sprinkle them with the sesame seeds (if desired), and bake for 5 to 6 minutes, until bubbly and browned. When cool, break the rounds into various-sized pieces.
