WORKING MOTHER’S BARLEY

- 1 cup pearl barley, rinsed and drained
- 1 recipe Cheater’s Homemade Broth, chicken or vegetable; or two 14-ounce cans broth
- 2 to 3 cups water
- ¼ teaspoon salt, or to taste
Instructions:
Sometimes we wonder if people stay away from grains because they feel bullied by the cooking directions.
- Place the barley, broth, 2 cups of the water, and the salt in a 4-quart saucepan. Bring to a boil. Reduce the heat and simmer, uncovered, for 25 minutes, or until tender. If the barley starts to dry out before it’s fully cooked, simply add more water.
- Drain in a strainer. Serve hot or at room temperature.
