Yankee apple snow

This old-fashioned dessert from northern New England used to be tedious to make, as it had to be whisked by hand to frothy lightness. Today, with an electric mixer, we can make it in minutes!
- 1 large Granny Smith apple, or 2 small tart apples;
- 1 tablespoon lemon juice;
- 3⁄4 cup powdered sugar;
- 2 egg whites;
- Vanilla Cream Sauce.
- Pare the apple and grate it into the large bowl of an electric mixer (you should have about 1 cup grated apple). Stir in the lemon juice. Add the sugar and egg whites. Beat at high speed until the pudding is light and frothy, about 5 minutes. Heap into a glass dish and serve with Vanilla Cream Sauce.
