Yogurt Potato Salad
Instructions:
- 3/4 cup yogurt
- ï€ 1/4 cup low fat mayonnaise
- ï€ 2 teaspoons prepared mustard
- ï€ 2 teaspoons horseradish
- ï€ 4 cups cubed cooked potatoes
- ï€ 1 cucumber, seeded and cubed
- ï€ 1/2 cup sliced celery
- ï€ 1/4 cup chopped onion
- ï€ 1 tablespoon green onion, chopped (only green part)
- Combine yogurt, mayonnaise, mustard and horseradish in large mixing bowl.
- ï€ Add potatoes, cucumber, celery, onion and green onion; mix well.
- ï€ Chill at least 2 hours.
