Yummy yam sticks
Instructions:
- 2 pounds sweet potatoes or yams;
- 1-2 teaspoons vegetable oil;
- Sprinkle of lemon juice (optional);
- Sprinkle of rosemary (optional).
- CHOOSE:
- Firm and fairly smooth sweet potatoes. Avoid sweet potatoes that have wilted or wrinkled skin, cut surfaces, or dark areas.
- STORE: In a cool, humid (but not wet), dark place. Do not wash before storing. Do not refrigerate.
- HOW TO USE: Wash well. Sweet potatoes can be steamed, boiled, baked, roasted, or microwaved.
- Wash and cut sweet potatoes into sticks or wedges.
- Place potatoes in a bowl and toss with oil.
- Spread out onto baking sheet.
- Sprinkle with rosemary. (if desired)
- Bake 1⁄2 hour at 375 degrees, or until brown and tender (you may want to turn them over half way through the baking time).
- Sprinkle with lemon juice. (if desired)
