Zesty Orange Muffins
Instructions:
- 2 cups all purpose flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/3 cup currants (or dried chopped apricots)
- 1 egg
- 1 cup plain yogurt
- 1/4 cup melted butter
- 2 tbsp. orange rind strips, chopped fine
- 1/4 cup orange juice
- Preheat oven to 350F and grease muffin pans.
- Stir together flour, baking powder and soda, and salt in large mixing bowl. Mix in currants.
- In another beat eggs, blend in yogurt, butter, orange rind and juice.
- Stir into flour mixture and blend only until dry ingredients are moistened.
- Spoon into muffin pans.
- Bake for 20 to 25 minutes or until firm to touch.
