Lemon Meringue Pie
Instructions:
- 1 1/2 cups sugar
- 5 tablespoons cornstarch
- 4 tablespoons flour
- 1/2 teaspoon salt
- 2 1/4 cups boiling water
- 1/2 cup lemon juice
- rind of 1 lemon, grated
- 3 eggs, separated into yolks and whites
- Mix sugar, flour, cornstarch, and salt.
- Add boiling water, stirring constantly, until mixture thickens, then cook over low heat 10 minutes.
- Beat egg yolks slightly.
- Pour cornstarch mixture over eggs slowly, stirring constantly.
- Return to low heat and cook 2 minutes longer.
- Remove from heat, add lemon juice and grated rind.
- Cool mixture, pour into baked pie shell, cover with meringue and return to oven to brown.
